Job Purpose:
The Butcher is responsible for preparing, cutting, and processing meat products to meet the hotel’s culinary standards. This role ensures meat quality, portion control, and hygiene compliance, supporting the kitchen team in delivering high-quality dishes.

Job Purpose:
The Butcher is responsible for preparing, cutting, and processing meat products to meet the hotel’s culinary standards. This role ensures meat quality, portion control, and hygiene compliance, supporting the kitchen team in delivering high-quality dishes.
General Requirements:
- Report to work on time, in full chef uniform, and ready 10 minutes before shift.
- Maintain high standards of personal hygiene and grooming.
- Follow all food safety and hygiene policies.
- Respect kitchen rules and instructions from supervisors.
- Display a cooperative and professional attitude within the team.
- Attend scheduled trainings and kitchen meetings.
- Show commitment to learning and maintaining meat processing skills.
- Keep all information about recipes and kitchen operations confidential.
- Comply with all Hotel operational standards and policies.
Primary Duties & Responsibilities:
- Receive, inspect, and store meat deliveries according to quality and safety standards.
- Prepare and cut meat into required portions for various kitchen needs.
- Trim, debone, and prepare meat products for cooking or storage.
- Ensure proper labeling, dating, and storage of meat products.
- Maintain cleanliness and sanitation of butcher’s work area and tools.
- Monitor stock levels and report shortages or quality issues to supervisors.
- Assist chefs in menu preparation requiring specific meat cuts.
- Dispose of waste in compliance with hygiene and environmental standards.
- Follow portion control and quality standards strictly.
- Operate and maintain butchering equipment safely and efficiently.
- Adhere to health and safety regulations regarding meat handling and processing.
Technology Competence:
- Basic knowledge of meat processing equipment and tools.
- Familiarity with food safety documentation and HACCP principles (training provided).
Safety, Health & Security:
- Use protective equipment such as gloves and aprons during butchering tasks.
- Handle knives and sharp tools with care to avoid injury.
- Follow cleaning and sanitation procedures rigorously.
- Report any accidents, injuries, or unsafe conditions immediately to supervisors.
- Adhere to fire safety and emergency procedures in the kitchen area.
